Holly’s Mighty Mac Cookies
Mix together until smooth:
1 stick of butter, softened
1 cup packed brown sugar
1 cup granulated sugar
Add to smooth butter/sugar mixture only until combined:
2 large eggs
1 tsp vanilla
In a separate bowl sift together:
3 cups of flour
1 tsp baking soda
_ tsp salt
Add 2 Tbs. of milk to the flour mixture (it’s not necessary to mix it together)
Slowly add flour mixture to butter/sugar mixture
The batter will be very stiff
In a separate bowl combine:
1 cup chopped macadamia nuts
1 cup dried cherries
1 12 oz. package of white chocolate chips (you can use chunks, too)
Sprinkle a small amount of flour just to coat each of these ingredients (this helps them not to stick to their own kind-as in a cluster of cherries…)
Add to batter and blend
Drop dough onto one of the following:
Greased cookie sheet
Cookie sheet lined with parchment
Cookie sheet with a Silpat (or something to that effect)
375-degree oven
If you want “normal” sized cookies, bake for 10 minutes
If you want larger cookies, bake for 15 minutes
These cookies are *best* when served the same day as baking. Enjoy!
